Comments on Firenze's Chick-fil-A post made me think of starting this thread. I am always looking for something easy to make, with a short list of ingredients, but tastes awesome. I made this yesterday & the crowd went wild. Very Happy


1 - 30 oz bag of frozen, shredded hash browns
3 - 14 oz cans of chicken broth (I used 1 carton of organic chicken broth instead & it worked fine)
1 - small can cream of chicken soup
1/2 cup onion, chopped
1/4 tsp ground pepper
1 pkg. cream cheese (NOTE: do not use fat free - it won't melt !!!)

In a crockpot, combine everything except cream cheese and cook on low for 6-8 hours. About 1 hour before serving, add cream cheese and heat until thoroughly melted.

May top with bacon bits (I used turkey bacon), chives, shredded cheese (I used sharp cheddar), sour cream, or whatever sounds good to you.

I served this with Belle Food's cheesy bread sticks, baked until a little hard to dip in the soup. It was super easy and soooo delicious.


P.S. Can make this vegetarian style by substituting vegetable broth & cream of mushroom soup. Smile

Yummy, will have to give that a try.

Someone "over there" asked for the Legend's potato soup recipe a few weeks ago. Here it is if any one is interested.

Makes 12-15 servings.........

9 baking potatoes
2/3 cup butter
2/3 cup all purpose flour
6 cups whole milk
1/2 tablespoon salt
1 teaspoon ground black pepper
1/2 cup bacon bits (divided)
4 green onions, chopped
10 ounces shredded Cheddar Cheese
1 (8 ounce) container sour cream

Bake potatoes, afterwards she cubes the "flesh"....she said that some people just scoop it out.

In a large saucepan over medium heat, melt butter. Stir in flour and cook about a minute.Whisk in milk, a little bit at a time, stirring constantly until it thickens. Stir in potatoes, salt, pepper 1/3 cup bacon bits, 2 tablespoons green onions, and most of the cheese. Cook until thoroughly heated. Stir in the sour cream and heat through.

Serve topped with the rest of the bacon bits, onions and cheese.

Chicken n rice to die for!

2 lbs of chicken breasts, cut into bite size chunks.
3/4 cup white rice.
1 can cream of mushroom soup
1 soup can of milk
1 tbs minced garlic
1 package french onion dip mix
salt and pepper to taste
2 tbs vegetable oil

Season the chicken breast chunks with salt and pepper. Brown in a skillet in the oil along with the minced garlic.
Mix mushroom soup, milk, rice and 1/2 of the package of french onion dip mix. Pour into a dutch oven or 7x11 baking dish.
Add browned chicken and sprinkle remaining french onion dip mix over top. Cover and bake at 350 degrees for one hour. Uncover and bake for additional 15 minutes.
